These muffins are white flour free, butter free and sugar free -but definitely not taste free! I recently purchased the Lola Berry Happy Cookbook which is filled with paleo recipes. After hearing so much about the paleo diet I thought I would give it a go; funny enough I headed straight to the sweet section. Whilst there is no sugar there is certainly sweetness in the form of 125ml of honey which I reduced to 90ml. Whilst I can’t see myself becoming a Paleo convert it was nice to try something different and I can see the healthier benefits in these muffins.
Ingredients
55 g (1/2 cup) almond meal
30g (1/4 cup) coconut flour
30g (1/4 cup) arrowroot flour
1 teaspoon baking soda
2 tablespoons poppy seeds
4 eggs at room temperature
Pinch of salt flakes
125ml maple syrup or honey
60ml (1/4 cup) coconut oil melted
125ml freshly squeezed orange juice
Zest of 1 orange
Method
Preheat the oven to 1800C and line an 8 hole muffin try with patty pans
Put all the ingredients into one big bowl, stir well until there are no lumps and then scoop the mixture into the patty pans. Bake for 35-40 minutes. Your muffins should be a little golden on top. Remove from oven and set aside to cool.
