This crumble would have to be one of my favourites, I love the addition of marzipan and almonds. I originally saw this recipe on the cover of Delicious, July 2012, page 64 and I have been making it ever since.
Ingredients
1 kg green apples (about 5)
1 tbs lemon juice
200 gm frozen mixed berries, thawed
100 gm brown sugar
4-5 cloves
1/2 tsp ground ginger
200 gm marzipan, chopped
Custard or ice cream to serve
Almond crumble
200 gm chilled unsalted butter, chopped
1 2/3 cups (250 gm) plain flour
30 gm brown sugar
1/3 cup of almonds, chopped
1 tsp ground cinnamon
75 gm good-quality dark chocolate, chopped
Preheat the oven to 200 degrees c. For the crumble, place the butter and flour in a large bowl and rub together with your fingertips to form coarse crumbs. Stir in the sugar, almonds, cinnamon and chocolate. Set aside.
Peel and roughly chop the apples, then place in a 2 litre ovenproof dish. Toss with lemon juice, then carefully stir in berries, sugar spices. Dot with marzipan then top with the crumble.
Place the dish on a baking tray and bake for 45 minutes until the topping is golden and the fruit is tender. Stand for five minutes, then spoon into bowls and serve with custard or ice cream.
Serves 6-8
Perfect served with a good quality ice cream or custard.
