The great reviews you receive from this slice are always a bit surprising because it is so simple, but yet so tasty. It is really easy to prepare and really great to enjoy with either a cup of tea or a coffee, and not overly indulgent in its ingredients which makes it even more enjoyable.
1 cup rolled oats
1 cup plain flour
1/2 cup caster sugar
3/4 cup desiccated coconut
2 tablespoons golden syrup
125g butter
1/2 teaspoon bicarbonate of soda
1 tablespoon hot water
200g dark chocolate 70 melted
Preheat oven to 160 degrees. Combine the oats, flour, sugar and coconut in a bowl. Place the golden syrup and butter in a saucepan over low heat and cook until melted. Mix the bicarbonate of soda with the water, add to the syrup mixture and stir to combine. Add the syrup mixture to the oat mixture an mix well.
Press the mixture into a lightly greased 20cm x 30cm cake tin lined with non-stick baking paper.
Bake for 20 minutes or until golden. Allow slice to cool in the tin. Pour over the melted chocolate and refrigerate until set.
To melt chocolate, break into squares and place in a heatproof bowl over a saucepan of simmering water. Stir the chocolate until melted and smooth.
This recipe is really relaxed with good results – it’s a keeper!
